Savor the Flavor: Apricot Goat Cheese & Pistachio Crostini

This recipe is all about texture! Eat this one slowly and really notice the differences in texture between the warm, cripsy bread and the creamy goat cheese. Notice the toughness of the apricots and the crunch from the pistachio. Revel in the flavors of the tangy goat cheese mixed with the sweetness of the honey and apricot. This recipe is to die for!

Pro Tip: Warm up the goat cheese before mixing in the other ingredients to make the topping easier to spread!

Apricot Goat Cheese & Pistachio Crostini


1 loaf French bread

12 dried apricots (or canned is fine), chopped

4 oz container of goat cheese crumbles

12 fresh thyme springs

1 handful pistachios, chopped

1-2 Tbsp honey


Preheat oven to 350°F.  Slice bread and toast in oven.

Mix together apricots, cheese crumbles, thyme, and pistachios. Top toasted bread with mixture. Drizzle with honey.

Yield: 12 pieces
